With the aim of regulating the sector, on January 10, 2014, the Iberian Quality Standard came into force. (Royal Decree 4/2014).
Quality standard for meat, ham, shoulder and Iberian loin.
Through this standard, Iberian pig products are differentiated based on the type of diet and breed type.
Depending on the diet, a distinction is made between acorn-fed ham, field bait ham and bait ham.
- Acorn-fed: pigs fed exclusively on acorns, herbs or other natural foods in the pasture.
- Field bait: Products from pigs fed on natural resources from the pasture (such as acorns) but with additional feed.
- Bait: Products from pigs fed with feed.
Depending on the racial type, we can differentiate between:
- 100% Iberian: This type of product comes from 100% Iberian pigs, that is, their parents are also of genetic purity.
- Iberian: for this condition to occur, they must have at least 50% of genetic purity. We can differentiate between 75% Iberian and 50% Iberian products.
